    1 TBS olive oil
    2 large onions diced
    2 cups diced raw zucchini
    3-4 cloves of garlic minced
    2 large cans (796 mL) diced tomatoes (or 7 cups fresh)
    2 cups frozen corn (or fresh off the cob)
    1 tsp granulated sugar
    1 TBS cilantro minced (or flat leaf parsley)
    1/2 tsp liquid smoke flavoring

    opt: 1/4 tsp chipotle peppers in adobe sauce (or to taste)


Saute the onions until translucent. Add the garlic and the zucchini and cook about 10 minutes. Add the tomatoes, chipotle peppers in adobe sauce if using, and sugar. Bring to a boil. Can let set at this point for as long as desired. About 10 minutes before serving add the corn and liquid smoke. Cook til corn is done, then stir in the cilantro.
Serve with light sour cream if desired, but is delicious just as it is.
