Introduction

Overripe melon is perfect for this recipe! When it's too mushy to be enjoyed properly, this is one way to save it. My local produce place had it for $1 per quart (already peeled and diced), so I had to get some. Overripe melon is perfect for this recipe! Ingredients

    2 cups diced cantaloupe
    2 tsp. granulated sugar (or sugar substitute)
    2 Tbsp. evaporated milk
    splash of vanilla extract

Directions

Dice and chill the cantaloupe beforehand in the fridge. Using a blender, puree the cantaloupe and mix with the milk and sugar to taste. Serve immediately, or put mixture in the freezer and then blend again for a thicker consistency.

Note: Calorie count is for regular sugar, not sugar substitute. Also not included in the calorie count is the option to replace the vanilla extract with Malibu or Midori or some other tropical adult beverage (if desired).
