Ingredients

    1 cup whole wheat flour
    1 cup uncooked wheat bran
    1 tsp baking powder
    1tsp baking soda
    1tsp salt
    2tbsp cocoa
    1/4cup unsweetened applesauce
    1/4 cup honey
    2 eggs
    1/4 cup silk plain light soy milk
    3 medium bananas

Directions

Measure all dry ingredients into mixing bowl. Stir to combine. Make a well in center.

In another bowl mash bananas and combine applesauce. Mix honey, eggs milk and blend in with bananas, pour into well. Mix until moistened, Ignore lumps. Fill greased muffin cups 3/4 full. Bake in 400 F(200 C) oven for 20-25 minutes.

Yields 12 muffins
