    2 cups turkey (leftovers)
    1 can spinach rinses and squeezed
    2 eggs
    1 tablespoon olive oil
    1/2 cup onion, diced
    2 tsp garlic, minced
    8 Tbl Parmesean cheese
    1 tablespoon oregano


Drain and rinse spinach well, then squeeze water out. Saute onion and garlic in oil until translucent, cool. Transfer to a bowl with spinach, oregano, Parmesean cheese, eggs and turkey, mixing well. Form into 6 patties, grill or cook on stove.
Calories are figured without bread.

You could also bake them in large muffin tins at 400 F intil eggs set, about 25 min.
