Number of Servings: 8


    1 teaspoon olive oil
    1 onion, chopped
    2 cloves garlic, chopped
    2 packages frozen spinach
    1 can crushed tomatoes
    1 can chick peas/garbanzo beans, drained
    Optional: parmesan cheese


Defrost the frozen spinach by placing it in a bowl and pouring boiling water over it.

Meanwhile, add the olive oil and chopped onion and garlic to a soup pot, and cook over medium heat until the onion and garlic are soft.

Add the crushed tomatoes (do not drain) and chick peas to the pot. Add the spinach and about 1 cup of the defrosting water (this will be dark green and full of vitamins).

Heat through, stirring occasionally.

Makes 8 generous servings; sprinkle a little parmesan cheese on top if you like.
