Ingredients

1 tsp canola oil
4 oz cooked pork tenderloin, diced
1 cup chopped white onion
1 bunch chopped green onions
2 cups thinly sliced green bell pepper
1 cup thinly sliced red bell pepper
1 4oz can mushrooms, drained
1/4 cup cooked lentils
1.5 cups cooked brown rice (I cook both the rice and the lentils in a rice cooker), cooled
1 tbsp lite soy sauce
1 cup reduced sodium chicken broth
1/4 tsp crushed red pepper
1/8 tsp ground ginger
1/2 tsp garlic powder
1/8 tsp black pepper
salt to taste
Directions
1. Heat canola oil over medium-high heat in a large skillet.
2. Add white onions, bell peppers, and mushrooms. Cooks, stirring every 10-15 seconds, until onion is translucent and peppers begin to be tender. Stir in the green onions and spices and cook for 2 more minutes, stirring once or twice.
3. Add pork and cook for a few minutes more, or until warmed. Add rice, lentils, chicken broth, and soy sauce. Stir to combine and cook, stirring, until the liquid is absorbed and rice is heated through. Taste and add salt, if desired.
Makes 4 1.5-cup servings
