2 servings (1/2 bag) of Trader Joe's Spinach and Chive Linguine
6 oz. (approximately 36) medium shrimp, tail-off
1 tbsp extra virgin olive oil
1 clove garlic, finely chopped
1 tbsp chopped fresh basil
Sea Salt Crystals
1/2 cup white wine (I recommend a Sauvignon Blanc with citrus notes)
1/4 cup freshly shredded parmesan cheese
2 sprigs fresh basil (optional)
Directions
For the Linguine:
Fill a medium sized saucepan with water, add a little olive oil. Bring to a boil. Add pasta, stir and cook for approximately 3 minutes until the pasta is tender. Do not overcook! Drain, rinse with cold water, and set aside.
For the Scampi:
Heat olive oil in a large saute pan over medium heat. Add garlic, basil, a pinch of sea salt, and shrimp. Saute until shrimp start to get a little pink, generally about 2-3 minutes. Add white wine, stir well and increase heat to medium-high so that liquid bubbles. Cook until wine reduces down about 3/4. Remove from heat. Add cooked linguine and toss thoroughly so that the pasta is well coated with the liquid. Serve sprinkled with a little freshly grated parmesan cheese and a sprig of fresh basil.
