    2 oranges, in segments
    2 boneless, skinless chicken breasts
    4 cups packed baby spinach
    2 cups packed torn romaine
    2 cups torn radicchio
    3 green onions, sliced
    1 cup blanched snow peas
    half a cucumber, sliced
    1/4 cup vegetable oil
    2 tbsp rice vinegar
    1 tbsp sesame oil
    2 tsp soy sauce
    1/2 tsp dijon mustard
    1/4 tsp granulated sugar
    pinch pepper
    1 tsp toasted sesame seeds


Segment oranges; reserve juice.
Toss chicken with tbsp of dressing and reserved orange juice.
Cover and refrigerate for 30 minutes.
Transfer chicken to foil-lined baking sheet.
Bake at 375 oven unitl no longer pink inside, about 25 minutes.
Let cool to handle, cut into cubes.
In large bowl, toss together spinach, lettuce, radicchio, green onions, snow peas, cucumber, chicken, dressing. Sprinkle with toasted sesame seeds and orange segments.
Makes 4 servings.
