Introduction

Delicious muffins that bake up light & fluffy, not gooey & underdone! Delicious muffins that bake up light & fluffy, not gooey & underdone!

Ingredients

    1 3/4 c. sifted flour
    1/4 t. baking sode
    2 t. baking powder
    1/2 t. salt
    1/3 c. unsalted butter
    2/3 c. granulated sugar
    2 eggs, well beaten
    1 cup mashed bananas (2-3 bananas)

Directions

Sift together flour, soda, baking powder and salt. In separate bowl, bream butter well. Add sugar to butter and continue to cream until light and fluffy. Add eggs and beat well. Add bananas alternately with flour mixture to butter/sugar combo. Beat until smooth. Spoon into muffin tins and bake 15-17 minutes until done.
