    2 cups rice
    2 cups water
    1 bouillon cube
    1 onion (chopped)
    1 clove garlic
    1 tbsp olive oil
    1 small can tomato sauce
    1 can red kidney beans
    3 links chicken sausage (Aidells can be found at Costco. Trader Joes makes a great chicken sausage as well)
    1 tsp. cumin
    .5 tsp cayenne pepper
    8 shots of hot sauce (more or less depending on your taste)
    .5 tsp thyme
    .5 tsp parsley
    salt and pepper to taste


Combine rice, water, and boullion. Cook according to instructions on rice. While rice is cooking saute onion, garlic, olive oil. Add the cumin, cayenne, hot sauce, parsley, thyme and salt. When almost fully cooked add tomato sauce. Add red beans and sausage (cubed) and heat thoroughly. Serve over rice. Makes 4 nice portions.

  • I loved this. Very tasty and full of flavor. It's easier to make this dish spicier if you like it. I used the Aidell's Chicken Sausage that has habaneros in it and it was so yummy! - 7/27/07
