Introduction

This is quick and very easy recipe to make. it takes a bit of attention and time so it won't scortch. Make sure to bring up the heat slowly to melt the cheese. My picky eater daughter loves this. This is quick and very easy recipe to make. it takes a bit of attention and time so it won't scortch. Make sure to bring up the heat slowly to melt the cheese. My picky eater daughter loves this.

Ingredients

    4 red potatoes, cut into small cubes
    2 cans cream corn (standard 14.75 - 15oz can)
    2 - 12oz cans fat free evaporated milk
    1 cup reduced fat, 2% shredded mild cheddar cheese
    salt and pepper

Directions

Boil the cubed potatoes in water (unpeeled). Remove from heat and drain. In same pot, add back the potatoes, add cream corn, evaporated milk, salt and pepper. Set back on low heat. Bring it up to heat slowly stirring until you see steam rise. Slowly add cheese mixing constantly until melted.
