    1 lb ground beef (extra lean)
    1 -46 oz bottle vegetable juice (low sodium)
    1 bag mixed veggies
    1 onion, chopped
    garlic to taste (I use 6 cloves)
    1 bag frozen broccoli/cauliflower
    any other veggies your heart desires
    salt and pepper to taste


brown beef with chopped onion and garlic. drain fat. combine juice and vegetables in large pot and bring to a boil. add meat mixture and simmer 10 or so minutes or until you want to eat... season to taste.
