    6 cups beet juice (added as 2 cups cooked beets)
    8 tsp lemon juice
    2 boxes Certo Light
    4 cups granulated sugar
    4 cups Splenda
    2 pkg Raspberry Jell-o, Light


Combine beet juice, lemon juice and pectin in large pot. Bring to a rolling boil. Quickly add sugar, return to boil, and boil for exactly 6 minutes. Add the Kool-aid powder and mix thoroughly. Pour into sterilized 8 oz jelly jars. Fill to within 1/2 inch of top. Put on cap, screw band firmly tight. Yield: 9 - 8 oz jars

  • I would like to try this, but the directions say add kool-aid and I do not see that as an ingredient. Also....should the recipe say 4 cups splenda OR 4 cups sugar. I Can't believe you are supposed to put both. - 8/17/09
