    8 Rashers Bacon
    2 cups Mushrooms (sliced)
    1 cup Onion (chopped)
    2 cloves Garlic (crushed)
    450g Fettucine Pasta
    1/4 cup Parmesan (grated)
    4 Egg Yolks
    1 1/4 cups (300ml) Lite Thickened Cream
    Black Pepper


*Boil a large pot of water add a splash olive oil and a pinch of salt and cook the fettucine for 9-10 minutes,while the fettucine is cooking...Trim bacon and cut into chunks. Fry over medium heat until crispy, remove and drain on a paper towel.

Saute onion, garlic and mushrooms, add the cooked bacon, turn off pan heat. Drain the pasta, add to the pan with the other ingredients.

Beat the egg yolks, cheese and cream in a bowl.

Pour over the pasta and toss gently with tongs cooking for a further 1-2 minutes on a low heat until slightly thickened - don't overheat or the eggs will scramble.

Season well with black pepper and serve.
