This has always been a summer favorite for our family so I decided to try to lighten it a bit! This has always been a summer favorite for our family so I decided to try to lighten it a bit!
Number of Servings: 18


    About 25 oreo-type cookies( with the filling removed and the cookies crushed or pulsed in food processor)
    6 oz. light Blue Bonnet Margarine
    1 gallon lowered fat ice cream (ours was about 120 calories per 1/2 cup)
    2/3 cup semisweet chocolate chips
    1 1/2 cups nonfat evaporated milk
    2 cups powdered sugar
    1 stick light margarine
    1 tsp. vanilla


Take cookie crumbs and mix with 6 oz. melted light margarine. Press into bottom of 9x13 pan and put in freezer.
Set out ice cream and let it soften to wear it is spreadable. After the crust is solid put ice cream on top of it and spread evenly. Put back in freezer.
Put the milk, chocolate chips, powdered sugar and margarine in saucepan and bring to a boil. Stir constantly and boil for 3 minutes. Let this cool to room temperature and then put on top of the ice cream layer. A yummy summer Sunday dessert!
