Healthy twist on the classic cheese stuffed shells Healthy twist on the classic cheese stuffed shells
Number of Servings: 20

    1 package wheat lasagna noodles
    2 cups cottage cheese
    2 cups mozzarella cheese (shredded)
1/2 cup summer squash or zucchini (diced)
    5 cloves of garlic (minced)
1 can diced tomatoes (drain liquid)
    1 jar spaghetti sauce
    1 Tablespoon basil (dry/fresh)
    1 Tablespoon parsley (dry/fresh)
    1 Tablespoon oregano (dry/fresh)

Cook lasagna noodles according to the directions. While the noodles are boiling, in a medium size bowl, mix cottage and mozzarella cheeses, squash, garlic, diced tomatoes, basil, parsley and oregano. When the pasta is tender, drain and cut the noodles in half. Coat the baking pan bottom with a thin layer of spaghetti sauce. Layout noodles and put approximately 2 tablespoons of cheese filling on it, roll the pasta, then place them tight together in the pan (will fill 1 1/2 9x13 pans). Once all rolled, pour remaining spaghetti sauce over the rolls. Place foil over the dish to keep it from burning. Put the pan in a 350 degree preheated oven for 20 minutes.
