    4 tsp olive or canola oil divided
    3/4 tsp salt, divided
    1/2 tsp cumin
    1/2 tsp chipolte chili powder
    1/4 tsp fresh grind pepper
    1 lbs flank steak
    1 (18 oz) tube of polenta, cut into 8 slices
    1 ripe peeled avacado, sliced
    1/2 cup chopped cilantro
    1/2 cup crumbled queso fresco (queso blanco, blanco fresco, there seem to be a lot of names for this cheese)
    1/2 cup refrigerated pico de gallo
    8 lime wedges


Heat the grill or a grill plate to medium high heat.

Combine 1 tsp oil, 1/2 tsp salt, cumin, chili powder, and pepper; rub evenly over steak. Grill 6 minutes on each side or until done. Let stand 5 minutes. Cut diagonally across the grain in thin strips.

While steak rests, brush remaining oil over both sides of the polenta slices and sprinkle evenly with salt. Grill 3 minutes each side until brown.

Arrange 2 polenta slices per plate, top with avacado, 4 oz steak, 2 T cilantro, 2 T queso fresco, and 2 T pico. Serve with lime wedges as garnish.
