Ingredients

    2 pkts Continental Alfredo Lite Pasta and Sauce
    75 g exra pasta - I use small spirals
    1 tin John West Salmon (95g) Natural Smoke Flavour but any flavour will do
    1 tablespoon chopped spring onions
    1/4 cup chopped mushrooms
    1/4 cup red capsicum
    garlic
    1 cup roughly chopped baby spinach

Directions

Cook the extra pasta in boiling water as per the instructions (About 8 mins). Drain and leave aside. Cook the Continental pkts together in a large saucepan as per the instructions. When almost cooked add the extra pasta and you may need to add a little more milk. Leave to simmer stirring occasionally.
In a non stick frying pan lightly spray with low fat virgin olive oil. Add garlic, spring onions, capsicum and mushrooms and fry lightly for a minute or two until softened. Put in the spinach and turn off the heat. Put a lid on the frying pan and leave it on the hot plate but turned off. The spinach will wilt. Leave for a couple of minutes and then put it into the pasta with the can of salmon and stir it all in. Serve immediately.
