    1 tbsp olive oil
    1 tsp reduced calorie sesame oil
    1/4 cup minced onions
    1 tsp minced garlic
    2 large eggs
    1-1/4 cup brown rice
    2 cups water
    1 boullion cube (OXO or HerbOx Chicken)
    1/2 cup frozen peas and carrots
    1/4 cup cashew halves
    salt and pepper to taste


Directions (8 1/2 cup servings)

Heat olive oil in a medium saucepan over medium heat. Stir in onion and garlic.

Cook about 2 minutes or until tender.

Stir in sesame oil and brown rice and cook for 5 minutes.

Pour in vegetable broth made from 2 cups of water and OXO or Herb Ox Chicken Boullion.

Bring mixture to a boil, cover, and reduce heat to simmer for 45 minutes or until rice is tender and liquid is absorbed.

Mix in the frozen peas and carrots.

Make a well in the center of the rice; in a small dish or measuring cup, scramble two eggs with a dash of milk and a dash of water; pour into rice well, and stir until cooked.

Mix cashew halves into rice mixture, and serve warm.

Season with salt and pepper and low-sodium soy sauce to taste.
