    One pack of puff pastry (230 grams)
    500 grams leeks, cut and fried in 1 tablespoon olive oil
    400 grams soft goat's cheese
    2 tablespoons sour cream, low fat (15%)
    1 tablespoon mustard
    2 large eggs
    salt and pepper to season


Heat oven to 180*.
Chop leeks and fry with olive oil.
Season to taste.
Line a quiche dish with pastry.
Scoop in cooled leeks.
Cut cheese in disks and place on top of leeks.
Mix together egg, sour cream, little salt and mustard and pour onto the leeks and cheese.
Bake for approx. 25 minutes or until done. (Egg will be set).
Serve with a green salad and asparagus spears on the side.
