    8 oz. cooked red potato, diced
    1 1/2 tbs. red wine vinegar
    2 tsp. olive oil
    1 tsp. dijon mustard
    1/4 cup water
    1 tsp. minced garlic
    1 tsp. dried parsley or
    1 tbs. of fresh parsley


Cook potatoes in boiling water until soft. Drain and cool potatoes. Mix all dressing ingredients together and pour over potatoes. Chill potato salad for 2 hours.

Serves: 1

Variation on dressing: 1 tbsp. sugar free mayo, 1 tbsp. low fat or fat free yogurt, 1 tbsp. mustard, 1/4 tsp. dill, 1/4 tsp. celery seed. 1/4 tsp. salt & pepper each.

Add 4 oz. of cooked diced chicken breast and you have a complete meal.
