    1 tbsp Margarine
    1 Medium Onion, chopped
    3 Garlic Cloves, finely chopped
    1.5 tsp Ground Cumin
    4 cups Vegetable Broth
    1 cup Water
    1 Large Carrot, peeled and diced
    1 Stalk Celery, diced
    1 cup Red Lentils
    1 Medium Potato, peeled and diced
    2 tbsp Cilantro, finely chopped
    1 tbsp Lemon Juice
    1 tsp Hot Pepper Sauce


Melt margarine in a 5 litre saucepan and cook onion with garlic over medium heat, stirring occasionally, 5 minutes or until onion is tender. Stir in cumin and cook 1 minute. Stir in broth, water, carrot, celery, lentils, and potato. Bring to a boil over high heat. Reduce heat to a simmer partially covered 30 minutes or until lentils and vegetables are tender. Optional: Puree soup in a blender or with immersion blender until desired consistency. Stir in remaining ingredients. Makes 5 servings.
