Introduction

Just used what I had in my fridge tonight and this is what I came up with. Just used what I had in my fridge tonight and this is what I came up with.
Number of Servings: 4

Ingredients

    4 cups whole wheat penne pasta cooked (half box dry)
    1 tbsp Olive Oil
    1 Zucchini sliced
    1/2 cup diced Roasted Red Peppers
    1 Chicken Breast cooked and diced
    1 tsp Mrs. Dash Garlic & Herb Seasoning
    2 tsp Parmesan Cheese, grated

Directions

Cook pasta according to instructions. Pan cook chicken breast until no longer pink. Remove from pan and slice. Add olive oil to pan. Add zuchini and peppers, cook until heated through. Add chicken back to pan, sprinkle with Mrs Dash to season. Mix with cooked pasta.

Serve with Parmesan cheese, grated over pasta.
