    3 - 4 boneless, skinless chicken cutlets
    3 tbsp canola oil
    1/2 cup soy sauce
    1/2 cup orange marmalade
    2 tbsp corn starch
    1 - 2 small onions, chopped into half-moons slices
    1/4 cup ginger, julienned
    1 tsp garlic
    1 cup green beans


1) Whisk together soy sauce and corn starch together and set aside.

2) Chop chicken breast halves cross-wise into strips. Cut the strips in half if you prefer more bite-sized chunks. Season with salt and pepper.

3) Heat 2 tbsp of oil in wok or skillet until very hot and add chicken. If the pan is small cook the chicken in one or two batches. Cook until light brown and set aside on plate.

4) Add remaining oil and heat, then add onions. Cook until the onions become translucent. Add Ginger and garlic, stirring so that garlic doesn't burn. Cook about 3-5 minutes. Add green beans and cook a few minutes more until beans become bright green.

5) Return chicken to pan and toss ingredients until combined. Add marmalade (and orange uice if you choose) and stir until the ingredients are coated with the marmalade.

6) Add Soy sauce/corn starch mixture. The heat will thicken the mixture quickly, so stir quickly and then remove pan from heat.

7) Serve with white or brown rice. Enjoy!
