    1 tbsp Olive Oil
    1 stalk Celery, diced
    1 Carrot, diced
    1 Onion, diced
    1 tbsp Plain Flour
    1 cup Milk (2%)
    0.5 cup Light Grated Cheese (25g)
    140g Light Tuna in Spring Water (drained)
    2 Mini-tubs Extra Light Philadelphia Cream Cheese
    125g (dry weight) Penne (or similar pasta), cooked


Preheat oven to 180 (Celsius).

In a saucepan, over medium heat, cook celery, carrot, and onions in olive oil until tender, stirring frequently.

Stir in flour, salt, and pepper (to taste) until blended.

Gradually stir in milk and cream cheese and cook, stirring constantly until blended.

Continue cooking until sauce is slightly thickened and smooth. Remove saucepan from heat.

Meanwhile , prepare pasta as directed on package, undercooking by several minutes.

Into cheese sauce gently stir hot, drained pasta, and the drained tuna.

Pour mixture into a non-stick baking or casserole dish. Top with grated cheese.

Bake 20 minutes or until mixture is hot and bubbly.

Makes 3 servings. Can be frozen.
