Ingredients

2 medium sweet potatoes, large dice
1/2 red onion, large dice
1/2 red bell pepper, large dice
1/2 Granny Smith apple, peeled, large dice
1 Tbsp Extra virgin olive oil
1 tsp garlic
1 tsp cumin
1/2 tsp cinnamon
1/4 tsp salt
1/4 tsp white pepper
1/8-1/4 cayenne pepper (optional)
1/4 cup fresh flat leaf parsley, chopped
Directions
*Heat oil in nonstick pan over medium high heat.
*Add first four ingredients, in order, one at a time, allowing 3 minutes cooking time (stir occasionally) between additions.
*Once the apples have been added, add remaining ingredients, except for the parsley
*Cook, stirring frequently, for 3-4 minutes
*Top with chopped parsley and serve
