Number of Servings: 6


    1 cup barley
    2.5 cups water
    8 sun dried tomatoes
    2 cloves garlic
    4 tb olive oil
    1 tb balsamic vinegar
    1/2 cup finely chopped cilantro
    1/4 cup fresh lemon juice
    1/4 cup crumbled feta cheee
    1/2 cup small chopped seedless cucumber
    3oz (about 24) calamata olives


Bring Barley and water to a boil in small pot over high heat. Reduce to a simmer, cover and simmer until barley is tender but still slightly firm in the center,about 30 minutes. Drain and cool to room temperature in a bowl.

Puree the sundried tomatoes, garlic, olive oil, balsamic vinegar and lemon juice in a blender until smooth. Pour over the barley. Fold in the cilantro, olives, feta and cucumber until blended. cover and refrigerate until cold. Stir before serving.
