Ingredients

    1/4 cup honey
    3 TBSP lemon juice
    3 TBSP EVOO
    1/2 tsp salt and black pepper
    1 1/4 boneless skinless chicken breast cut in 1 1/2 inch
    1 lb button mushrooms
    1 large eggplant
    2 bunches green onions cut in 1 1/2 inch
    2 Red bell peppers cut into 1 1/2 inch
    6 oz of brown rice or pilof

Directions

If you're using wooden skewers, soak them in water 20-30 minutes. Preheat grill to medium heat. In a small bowl, whisk together mustard, lemon juice, oil, salt, pepper. Thread chicken, mushrooms, oions, and peppers on skewers; brush all over with mustard mixture. Grill, turning occasionally, until chicken is cooked.
