Introduction

My favourite easy mushroom curry with a few extra tweeks. A little bit more effort and a lot more flavour. My favourite easy mushroom curry with a few extra tweeks. A little bit more effort and a lot more flavour.
Number of Servings: 2

Ingredients

    low fat spray in pan.
    2 medium onions sliced and diced,
    500g of mixed mushroom, (portabella, chestnut,shitake, button , white,)
    2 cloves of garlic
    2 teaspoon of curry paste or powder
    half a teaspoon of cumin seeds
    3 big tomatoes halved
    3 table spoon of tom puree
    4 table of low bio yoghurt
    salt and pepper
    and fresh coriander (cilantro) at the end.

Directions

put onions, garlic. curry paste, cumin seed in first and start to soften, then add mushrooms and toms and puree turn down to low heat.
if the mushroom do not sweat down quick enough and start to stick at a bit of water.
when mushroom soft and cooked through add yogurt and corriander turn heat of and let stand a few minutes stir then serve.
