    3/4c milk 2%
    1/4c canola or vegetable oil
    2 egg whites
    1 1/3c flour
    2/3c pancake mix
    1/2c splenda
    6tsp sugar (optional)
    1c blueberries fresh or frozen


Heat oven 400 degrees, grease bottom of 12 medium muffin cups, with shortening, or use cupcake papers. Beat milk, oil and egg whites together with whisk or fork. Stir in flour, pancake mix and splenda, sugar is optional, until moistened. You may have to had a couple tablespoons of water if batter it to thick. Fold in berries, divide evenly in muffin cups. Bake 20 to 25 minutes, until lightly golden brown. Serves 12
