Meat mixture:
2lbs Ground Beef 93% Lean
1 cup Onion, chopped
3 tsp Garlic, minced
1 tbsp Dill
1 tsp Sage
1 tsp Thyme
1 cup Tomato Sauce
1 cup White Rice, cooked
Cabbage:
8 cups Cabbage, chopped or shredded
1 tbsp Sugar
1 tsp Cinnamon
1 tsp Cloves, ground
Topping:
1 cup Mozzarella, shredded, part skim
1/2 cup Parmesan, grated
1 cup tomato sauce
Directions
In a large skillet combine ground beef, onion, garlic, and meat mixture spices. Cook until meat is no longer pink. Add rice and 1 cup of tomato sauce, simmer for 5 minutes.
While meat mixture is cooking, steam cabbage with a little water, sugar and spices in the microwave. I use a large zipper bag and give it a good shake to distribute the spices both before and after steaming (make sure it's sealed before you shake it and leave the zipper open a little while it's steaming so the bag doesn't pop).
Casserole assembly:
Put half the steamed cabbage mixture in the bottom of a large casserole, top with meat mixture. Cover the layer of meat mixture with the remaining cabbage. Pour the remaining tomato sauce over the top layer of cabbage and cover with the cheeses. Bake at 350 degrees until the cheese melts and begins to brown.
