    8 oz ground pork
    8 oz ground beef
    8 oz ground veal
    2 eggs, beaten
    1/4 C grated Parmesan cheese
    4 cloves garlic, chopped fine and sauteed
    1/3 cup plain bread crumbs
    1/4 cup fine chopped fresh parsley (Did not include and not represented in calorie content.)
    salt and pepper to taste
    1 cup olive oil (Only used 1/3 C. Only 1/3 cup represented in calorie content)


Preheat Oven to 375 F

Combine all ingredients except olive oil in a medium bowl.

Heat the oil in a large saute pan over medium high heat.

Roll in the mixture into 1 1/2 -inch balls and fry until brown on all sides but not cooked through completely.

Remove with slotted spoon to a plate lined with paper towels.

Put the meatballs in an ovenproof pan and naked for 20-25 minutes until the meatballs are cooked throughout. You can also continue to cook these in a tomato sauce if desired.
