    Spray pan with PAM
    Place 1 tortilla in pan, spread shredded cheese on totilla shell.
    Add remaining ingredients
    Top with second tortilla shell, cook over medium heat for a few minutes. Turn over and cook again until all cheese is melted.

    Add Cajun spices or other seasonings to taste.

    Enjoy with salsa.
