Ingredients

1 box Mori Nu Firm Silken LITE tofu
(it's not cold, it's tetrapack - look by asian food in your grocer)
2 tbs reduced fat unsweetened coconut
- toasted lightly at home or untoasted, as you prefer
1 tsp coconut extract
1 tsp vanilla extract
dash cinnamon (to taste)
12-14 drops liquid stevia (equivalent sweetness of 2 tbs sugar - if using other sweetener or dry stevia powder)
Directions
Put all ingredients in your blender or food processor. I used my Ninja with the small cup and that works super well.
Blend until creamy.
Chill (pudding will thicken) or eat as is.
Adding half a ripe banana makes the treat even smoother and adds a little sweetness and banana flavor.
Add unsweetened cocoa powder to taste for a chocolate coconut cream pudding.
Leave out the coconut for a vanilla cinnamon cream pudding. Possibilities are endless. :D
