Introduction

This is at least 3 generations old southern recipe. Corn meal may be used in place of flour. Very healthy with omega-3, veggies, and low carb and low cal. Number of Servings: 6

Ingredients

    Salmon 14.75 oz. can
    Egg 1 large
    Bell Pepper half cup chopped
    Sweet Onion half cup chopped
    Celery half cup chopped
    Self rise flour 1/4 cup
    Olive Oil 2 tblsp.
    Salt 1/2-1 tsp.
    Black Pepper 1/2 tsp.

Directions

6 generous servings

Chop all veggies as fine or coarse as preferred
Drain salmon into large mixing bowl
Mix all ingredients together. The finer the veggies are chopped the more moist the patties. Divide into 6 portions
Preheat nonstick pan with olive oil on medium heat . Place patties in pan gently. Lower temp to medium low.
Cover with a lid for 15 min. This allows them to "bake". Remove lid, and gently flip them to brown on other side. Do not replace lid. Cook 10 more min. These will be a nice medium brown color and not dry inside. The veggies make them very moist.
