    150g Softened butter
    100g Xylitol
    2 drops Vanilla essence
    40g Powdered Egg replacer (2 tsp)
    1 tsp Baking powder
    150g Plain White Flour
    175ml rice milk
    6 tsp Jam
    1 tsp Icing sugar


Preheat oven to 180˚C.
Serves 6.

Cream together the butter, sugar and vanilla until light and fluffy.

Add the egg replacer, beat till smooth and then add130ml rice milk. Beat in flour and baking flour, then the rest of the milk.
Divide between 2 oiled and lined 20cm round baking tins.

Bake in a pre-heated oven for 15/20 minutes.

Turn the cakes out onto a wire rack to cool.

Spread jam over one sponge and place the other on top.

Dust the top with sieved icing sugar.
