    Simply Potatoes diced with onion 2 cups
    5 fresh eggs, beaten
    Spinach, frozen, 1 package, defrosted
    Mushrooms, fresh, .5 cup, pieces or slices
    Peppers, sweet, red, raw, diced, .5 cup
    1/4 cup Athenos Low Fat Feta Cheese, 0.25 cup (
    Olive Oil, 1 tbsp (remove)


Heat oil in a skillet or other oven proof saute pan. Saute potatoes, spinach, pepper and mushrooms with a dash of salt and pepper. When they are well cooked, pour egg mixture over potato mixture. Cook for a few minutes until it bubble. Place omelet under broiler until eggs are firm. Top with mozzarella and feta. Place until broiler again until cheese is melted.
