Introduction

These muffins have amazing flavour, texture and moistness. The mix keeps for at least 2 weeks in the fridge but mine never lasts that long. These muffins have amazing flavour, texture and moistness. The mix keeps for at least 2 weeks in the fridge but mine never lasts that long.
Number of Servings: 24

Ingredients

    2 eggs
    1/3 cup molasses
    2 cups no fat milk
    3/4 c. unsweetened applesauce
    2 cups unbleached AP flour (or 1/2 whole wheat but they will be drier)
    2 cups raw wheat bran
    2 tsp. baking soda
    2 tsp baking powder
    1 tsp salt
    3/4 c raisins
    3/4 c dates chopped
    Blend wet ingredients together with dates & raisins
    Blend dry ingredients together
    Mix until blended but do not over mix
    Makes 24 muffins

Directions

I bake them for 20 mins at 375 in my convection oven and 23 minutes at 375 in a regular gas or electric oven
