Number of Servings: 8


    2 tbsp butter
    2 onions, chopped
    6 cups low sodium chicken broth
    2 lbs carrots, peeled and sliced
    2 tbsp grated ginger
    1 cup 1% milk
    Salt and pepper to taste


In a 5 or 6 quart pan over medium-high heat, stir butter and onions often until onions are limp, about 3 minutes. Add broth, carrots and ginger. Cover and bring to boil. Reduce heat and simmer until carrots are tender when pierced, 15 - 20 minutes. Using a hand blender, whirl until smooth. Add milk and stir over high heat until just boiling. Add salt and pepper to taste.
