    1.33 cup whole wheat couscous
    1.33 cup vegetable borth
    1/4 cup parsley, chopped
    1/4 cup pine nuts toasted
    1 tbsp olive oil
    juice and zest of 2 lemons
    salt and pepper


Bring vegetable broth to a boil. Add couscous and stir; cover and let stand 5 minutes. Fluff with a fork.

Stir in parsley, pine nuts, olive oil, lemon juice and zest. Season with salt and pepper to taste.

Makes 6 (1/2 cup) servings
