    1 canteloupe or honeydew melon
    1 can red or white kidney beans, drained
    3 green onions, thinly sliced
    1 small red pepper, finely chopped
    1 clove garlic, minced
    2 tbsp chopped fresh parsley
    2 tbsp lemon juice
    2 tbsp olive oil
    salt and pepper to taste


Cut canteloupe into small bite-size pieces. Add rinsed kidney beans, onions, red pepper, and parsley. Stir together minced garlic, lemon juice, and olive oil and pour over salad ingredients. Mix well.
