    1 1/2 cups all purpose flour
    3 1/2 tsp baking powder
    1 tsp salt
    1 tbsp sugar (just fine if this is omitted)
    1 1/4 cup milk (can use skim or non dairy milk)
    1 whole egg
    3 tbsp salted butter, melted (can use unsalted)


Sift together the dry ingredients. Make a well in the middle and add in your milk, butter, then egg. (make sure to add in this order, especially if your butter is hot, otherwise, scrambled eggs). Stir until well combined. It's ok if there are some lumps.

Spray your cooking pan and use a 1/4 dry cup measure and pour out your batter. Makes about 10 pancakes.

(substitutions can be made for the milk and eggs to make it more friendly for your diet. My son eats this and he's under 2 and on the underweight side of things, thus whole egg and whole milk was used.)
