A tasty breakfast for a weekend when you have some extra time to cook. A tasty breakfast for a weekend when you have some extra time to cook.

    1 egg white
    1 6" corn tortilla
    1/4 C fat free refried beans
    1/2 oz. grated pepper jack cheese
    2 TBS. pico de gallo tomato salsa
    Pam cooking spray


Pan fry the egg white in a non-stick pan sprayed lightly with Pam. While cooking, place refried beans in a bowl, cover and microwave for 45 seconds. Remove egg white, place corn tortilla in the pan and flip after 30 seconds or so. Place egg white on tortilla and spread warm beans on top. Spoon salsa on top of beans and sprinkle with grated pepper jack cheese. Warm until cheese begins to melt. Add one serving of fruit as a side dish and you are good to go!
