Ingredients

8 oz Halibut or white fish of our choice
2 Tbsp. Chili Powder
2 Tbsp. Paprika
2 Tbsp. Cayenne Pepper
1 pkg (2 tsp) Old El Paso Taco Seasoning Mix
1.5 Cup, Mild to Hot Salsa of your choice
1 Cup Shredded Cheddar Cheese
1 Large Tomato Diced
8 Medium Whole wheat Tortilla shells
8 Tbs Lite Sour Cream
1 Cup Shredded lettuce
1/2 Cup Lime Juice
Directions
Preheat oven to 350
Grease 13x9 baking dish, pour in lime juice.
Mix seasonings together in a small bowl.
Rinse fish fillet and pat dry. Sprinkle both sides of fillet with seasoning mixture. Place seasoned fillet in baking dish over lime juice. Pour salsa over the top of the fillet.
Bake 30-60 minutes, until fillet flakes nicely.
Remove from oven, let cool slightly.
Once cooled flake with a fork and mix together well so salsa is evenly distributed through fish.
While the fish is cooking prepare the other filling ingredients. Shred the cheese, dice the tomato, shred or chop the lettuce.
Place desired amout of fish, and filling ingredients to each tortilla and enjoy.
Serves 4, but could easily serve more, depenting on the size of the fillet, and the number of tortillas everyone wants to eat. Hope you enjoy everyone.
