    4 eggs; 2 egg whites
    1 tablespoon fat-free plain yogurt
    1/4 cup skim milk
    1 tsp bottled minced garlic
    1/2 teaspoon crushed red pepper
    1/4 cilantro, chopped
    1/4 tsp. salt
    1/4 tsp pepper
    2 tablespoons low-fat, shredded Parmesan cheese (optional)


Whist together eggs, yogurt, milk, garlic, red pepper, cilantro, salt and pepper. Spray a nonstick skillet with cooking spray and cook egg mixture over medium high heat until done. Top with Parmesan cheese.
