Ingredients

    1 to 2 tablespoons vegetable oil (to coat bottom of dutch oven)
    1 large onion (chopped)
    1 large bell pepper (chopped)
    3 stalks of celery (chopped)
    5 small cloves of garlic (minced small)

    1 pound lite sausage (cut into ½ inch rounds)
    4.5 pounds boneless skinless chicken breast (cut in half)

    1 bag (16 ounces) frozen okra (I purchase precut okra and remove any stem ends – I don’t like them.)

    ½ cup roux (I use instant roux & gravy mix from Zatarin’s http://www.cajunsupermarket.com/product_info.php?products_id=479 - I know Tony Chachere’s has one too which I’ve also used.)
    8 cups water (use 1 cup of water to dissolve the powered roux mix)

    4 small (or 2 big) bay leaves
    2 teaspoons dried thyme leaves
    2 teaspoons Tony Chachere’s creole seasoning mix (http://www.tonychachere.com/ )
    1 to 2 teaspoons hot sauce (depending on your taste)
    2 tablespoons dried parsley
    1 or 2 Sorrento peppers (if you like it spicy)

    Heat the oil in a large dutch oven on the stove top. Then add the onions, bell pepper, celery & garlic. Cook for 5 minutes stirring frequently. Add sausage, chicken and okra. Stir and cook for 5 more minutes. Add water, then roux mixed with water and then seasonings. Stir frequently while the whole mixture comes to a boil (it has a tendency to stick). Reduce heat to low and cook for 2 to 3 hours. Serve with rice and French bread.
