Number of Servings: 1


    One spring onion, sliced or chopped - your choice
    One tbsp. oil - your choice
    Six cups lentils (if not canned, add 1 1/2 more cups water)
    One cauliflower, any size, diced
    Two tsp. ground cardamom
    Two tsp. ground ginger
    Four tsp. black pepper, ground
    Four tbsp. cumin seed (preferably whole)
    Four tbsp. coriander leaf (also called cilantro)
    1/4 tsp. nutmeg, ground
    1/4 tsp. cloves, ground
    1/2 tsp. salt (add if needed)
    Two cups water (add 1 1/2 more if lentils are not canned)


Get a large (I mean it) pot and begin to saute the onion with the oil on medium heat. When the onion is translucent, add the lentils, cauliflower, water, and spices and stir until well-mixed. Turn temperature down to medium-low heat and cook for 35 minutes, stirring every 10 minutes. Take off the stove, eat in bowls, freeze the rest for another day.
