    20 oz Turkey Italian Sausage
    3 chopped garlic cloves
    1 cup onion chopped
    1 green pepper chopped
    1 red pepper chopped
    1 ~1 1/2 lb. eggplant peeled and diced
    1 28 oz can diced tomatoes
    2 t. dried basil


In large non stick pan sprayed with Pam, add turkey sausage and saute over medium high heat until cooked. Add each of the next ingredients and saute after each addition. Bring to a boil, cover and simmer until veggies are tender, about 20 minutes. Serve over whole wheat pasta. Makes 12 ~ 1 cup servings.
