Number of Servings: 6


    1 nine-ounce package fresh cheese tortellini, uncooked
    2 cups (2-inch) julienne-cut zucchini
    1 cup cherry tomato halves
    1/2 cup chopped red bell pepper
    1/3 cup sliced scallions (green onions)
    2 tablespoons grated Parmesan cheese
    1/3 cup fat-free red wine vinaigrette
    1 1/2 teaspoons chopped fresh dill weed (or 1/2 tsp dried)
    1/4 teaspoon black pepper


Cook tortellini in boiling water for 6 minutes, omitting salt & fat. Drain & rinse under cold, running water; drain well. Combine tortellini and next 5 ingredients in a bowl. Combine vinaigrette, dill weed & black pepper in a bowl; stir well. Pour over tortellini mixture; toss gently. Yield: 6 servings (serving size: 1 cup)
