Got this recipe on the back of a Chicken of the Sea Pink Salmon pouch. Got this recipe on the back of a Chicken of the Sea Pink Salmon pouch.
Number of Servings: 4


    1 6oz pouch Chicken of the Sea Pink Salmon
    1/4 cup finely chopped onion
    1/4 cup mayo (using Kraft Free Mayo in this recipe)
    1 tbsp fresh lemon juice
    2 tsp minced garlic (If using garlic powder, use 1/2 tsp. We like a lot of garlic in our foods in my family.)
    1/4 cup finely chopped red bell pepper
    1 large egg
    1 cup seasoned bread crumbs (recipe nutrition facts using Food Club Italian bread crumbs)
    3 tbsp butter or margarine (nutrition facts using margarine)
    1/4 tsp seasoned salt
    Dash cayenne pepper (optional, nutrition facts does not include cayenne pepper)


1.) Combine all ingredients in a bowl, only adding 1/3 cup of bread crumbs.

2.) Form mixture into 4 balls. Roll salmon balls in remaining bread crumbs; flatten into cakes about 1/2 inch thick.

3.) In skillet, melt butter/margarine over medium heat. Fry 3 to 4 minutes per side or until golden brown.
